ME LIKE HAZELNUTS. HAZELNUT-CHOCOLATE GOOOOD!!!

So… Primal Nutella… Maybe it is primal because it’s so grainy? Maybe it is so grainy because I have a low-end food processor? Maybe it’s so grainy because I couldn’t get any stevia, so I used raw sugar? I don’t know, it doesn’t really matter, because if you can get pass the texture, it tastes delicious. It is like natural peanut butter that you can still really feel the texture of the peanuts on your tongue. The coconut oil was a wonderful idea! The “nutella” wasn’t too hard to make, once we were beyond all the shucking!

For dinner, I made zucchini, mushrooms, onions, and brown rice. I sautéed the veggies in sesame oil and seasoned with garlic, ginger, citric acid, s&p. MMM! It was so scrumptious, I had to grab seconds!

While we were shucking, Julian and I watched the video I re-blogged yesterday. My gorgeous hubby commented on how everyone at work thought he was living on salads during his challenge (sound familiar?). We both laughed, because I haven’t made a single salad in the entire time two weeks. After I tamed my giggles, we talked a little about how Americans consume FAR too much meat. I think the recommended amount of meat (1lb a week) REALLY surprised him.

Even if he never decides that the veg life is the one for him, I think this experience has really helped opened his eyes. Maybe after he’s through, he will make more environmentally conscious decisions.

On a slightly different note, I went to get a latte last night and I was able to talk to the owner of Roots a little (I love a good triple shot soy latte).  It was refreshing to share the opinion that you have to do what works for you. What may not mesh for one person, may meld with another.  I think as long as we are all making a decision to better ourselves and the world around us, the path getting there isn’t as important.

This is really interesting. It’s not new info really, but I do like how he talks about it.  I should show this to my husband, but he thinks global warming is a myth too. ;) The U.S, kills ten billion animals a year for consumption. CRAZY! Can you believe that?

An Omnivorous Spouse

My husband and I had “the” conversations last night, and it ended up with me feeling very frustrated. My wonderful, beautiful, and kind husband still eats animal products. It is often strange to me, because he honestly is incredibly compassionate. 

It is important to tell you that I challenged him to go a month as a vegetarian. He accepted and has been doing wonderfully and only has a couple of weeks left. As far as I know, he hasn’t cheated once, and I am very proud of him, very, very proud. However, I am also disappointed at how deprived he feels. Maybe I am just a bad cook? ;)

So we talked about vegetarianism/veganism last night (again) and things just didn’t work out.

The conversation started with me commenting on how smart pigs are, and I told him about an article I read that day. We have been watching the show ‘Life’ on the Discovery Channel, and it seems to continuously stress that all animals will fight for their life and the continuation of their species. So I talked to him about how it is hard for me to justify ending another animal’s life when I don’t need to. He just listened to me talk (because he is so very polite).  

I was really trying not to sound preachy, and I didn’t want to sound condescending, because what he chooses is his choice. I expect people to respect my decisions, and I give my respect to their decisions. I only wanted to know what he thought about all of this, what he thinks about when he is eating a hamburger or drinking a glass of milk. 

His response was, “I don’t let myself think about it.”

I was baffled by this, honestly. I couldn’t think of a response. How can he just not think about it? There are so many horrendous things people could do if they just stopped thinking about the consequences. He is such a good, good man, that I know he thinks through plenty of the choices he makes and reflects on the effect he will have. If he acknowledges that he is unable to think of where his food comes from, what does that imply?

I wish talking to him about a veg life was easier, but I feel like I am being too pushy sometimes.

Okay, when I ordered my cupcake book, I also ordered some hazelnuts and cocoa powder.  I love Nutella, and I HATE that it has milk (along with 8 gazillion other ingredients). I will be making this tomorrow night, and I am dreading shucking those hazelnuts. Anyone want to help ??? ;)

I have a Black & Decker food processor, I wonder if it will be able to handle whipping the hazelnuts smooth. Also, I haven’t ever used stevia! Is it any good? I use mostly raw sugar, but I am more than open to try “extract of Steve”.  Hmm???

I think after my “Nutella” and cupcakes, I am going to need to calm down with the sugary stuff. I am so excited for the warmer weather to be showing up! All kinds of delicious things are on their way to my local grocer (well, kinda). I wish there was a farmer’s market here! I bought a little baby watermelon over the weekend, there is nothing that screams warm weather to me more than a juicy bowl of watermelon. Yum! I love to eat hummus and watermelon, not mixed together, just part of the same meal. Now I am going to have to place an order for some tahini!

IF THE CUPCAKES ARE IN CHARGE, SIGN ME UP!

I finally purchased Vegan Cupcakes Take Over The World  I have been interested in this for a couple of years, but never managed to actually pick up. I am in love with cupcakes, but I only make traditional vanilla and chocolate, so I hope Isa and Terry can open things up for me a bit more. Yummy!

I live in a pretty small town, so finding “special” vegan groceries tends to be a hassle. Even tofu can be hard to come by, and there definitely isn’t any variety. I like to order things online, but for perishable items I have to wait until we drive the three hours up to Salt Lake City. We haven’t tried to bring any frozen items back yet, but sometimes I just want a Tofutti Cutie!<3<3<3

This weekend, I will break my new book in,  and I will definitely post up a picture of all the scrumptious deliciousness!  

Does anyone else have problems finding “special” items they have heard about and want to try? How do you get your hands on them?

DOES THAT MAKE ME A VEGETABLE?

I like my vegetables, and my fruits, and my grains…  I love what I eat. That is not to say I eat what I love.

Living in a place where dinner was walking around in the backyard last week can make me feel like I am knocking my head against a wall. I am all for vegan education, but I much prefer being met with an open mind. I think this is a problem for more than just this heathen vegan. ;) I love my pets, I could not imagine eating a cow anymore than I could imagine one of them. It is as simple as that. The thought of eating a hamburger makes me feel like Hannibal (uncool). 

If I am what I eat, I think I am an eggplant. What are you? Babaganoush anyone???
